Meat doneness temperatures: the chart, and the probe

Whole cuts are safe at 145°F with a 3 minute rest, ground meat at 160, poultry at 165, per USDA. Steak doneness is convention. A probe settles both.

Whole cuts of beef, pork, veal and lamb are safe at 145°F internal, followed by a rest of at least three minutes. Ground meat needs 160°F, and poultry needs 165°F in every form, whole birds, parts and ground alike. Those are USDA floors, measured in the meat before it leaves the heat. Steak doneness, rare through well done, is a different scale, and it is kitchen convention, not safety guidance. The two get confused constantly, so this page keeps them in separate columns.

Every cooker covered on this site is judged partly on temperature control. How tight a pellet controller holds its set point, how far a kettle swings between vent adjustments, what a gas burner's low end really is. All of that describes air. Safety and doneness both live inside the meat, and the only instrument that reads them is a probe pushed into the food. A smoker that holds 225°F all night still cannot say what the middle of the brisket reached.

The USDA safe minimums

The figures come from the USDA Food Safety and Inspection Service chart. They are minimums for safety, not targets for quality, and they are read with a food thermometer before the food comes off the heat.

Ground meat runs 15 degrees hotter than the steak it came from for a mechanical reason: grinding takes whatever bacteria sat on the surface and mixes it through the interior. On a whole cut the surface is the part the fire sears. In a grind, the surface is everywhere.

The floor is also not a finish line. Barbecue cuts like brisket and pork shoulder clear 145°F long before their connective tissue softens, and cooks run them far higher for texture. That is preference, not safety, and the chart allows it in so many words: higher temperatures are the consumer's choice.

Steak doneness, next to the safety line

No agency publishes a rare or a medium rare. The bands below are American kitchen convention, and they drift a few degrees from one kitchen to the next. The USDA column sits beside them so the two scales never blur.

A medium-rare steak at 130°F sits 15 degrees under the USDA number. Serving it is your own informed call, the same call every steakhouse menu hands to the diner in the advisory fine print about raw or undercooked meat. The only requirement here is that the number be real, read off a probe rather than guessed from a poke of the tongs.

The bands are wrong for anything ground. A burger has no medium rare, whatever the menu says, because grinding already moved the surface through the middle. The burger number is 160°F.

Pull temperature and serve temperature

A large cut keeps cooking after it leaves the fire. The outer layers run hotter than the center, and that heat keeps moving inward while the meat sits. USDA builds the effect into its rest rule: during the three minutes after a whole cut comes off, the internal temperature holds or keeps rising, and the agency counts that time as part of what makes 145°F safe.

Cooks use the same physics for doneness. The usual planning figure, convention rather than guidance, is a rise of roughly 5 to 10°F in a big roast and only a few degrees in a thin chop. Landing a 135°F medium rare in a thick cut means pulling around 125 to 130 and letting the rest close the gap. The safety floor works in the other direction: the 145°F is read before the meat comes off, so any carryover on top of it is free margin.

What the lid thermometer actually measures

The dial in a grill lid reads the air at the lid. That is a real number about the wrong thing. It sits inches above the grate, up in the dome where the hottest air collects, and it says nothing about the interior of anything sitting on the grate. At food level the air can run meaningfully hotter or cooler than the dome reads, depending on where the fire is and where the food is parked.

A pellet controller is better instrumentation with the same limit. Its sensor holds air temperature at one point in the barrel, and the reviews here score cookers on how tightly they hold that number. Dinner is decided by a different number. Some pellet grills ship a wired food probe in the box, which is the maker conceding the point: the barrel and the meat are two separate measurements.

The instant-read thermometer

Appearance and color are not reliable indicators of safety or doneness, and FSIS reports that only about 15 percent of people consistently use a food thermometer. The same agency says one in four hamburgers may not be safely cooked even when it looks done.

An instant-read probe replaces the guessing with one number in a few seconds. Push it into the thickest part of the food, keep the tip off bone, fat and gristle, and read. For a thin patty, insert it sideways through the edge.

Buy it before any other accessory. A cover protects the purchase. The probe changes the outcome of every cook: it catches the chicken thigh that never reached 165°F and saves the pork chop headed for gray out of caution. Common questions

Is pork safe when it is still pink at 145°F?

Yes. USDA lowered its whole-cut pork recommendation from 160°F to 145°F with a three minute rest in 2011 and calls the two equally safe. Color was never the test anyway. FSIS is blunt that appearance and color are not reliable indicators of safety or doneness. Cook chops and roasts to 145°F on a thermometer, rest three minutes, and serve. Ground pork stays at 160°F.

Why rest meat after it comes off the grill?

Because the cooking does not stop when the fire's part ends. During the rest, a whole cut's internal temperature holds or keeps climbing, and USDA counts those three minutes as part of what makes 145°F safe on beef, pork, veal and lamb. Cooks use the same effect on purpose, pulling ahead of a doneness target and letting carryover land it. The size of that rise, roughly 5 to 10°F in a large roast, is planning convention rather than agency guidance.

Do you need two thermometers?

Two jobs, so eventually two tools. A grate-level probe or the cooker's own sensor answers what the pit is doing. An instant-read in the food answers whether dinner is done. Buy the instant-read first, because the pit number has a workaround in every dial and controller and the meat number has none. On long smokes, a leave-in wired probe adds the meat number continuously, and the instant-read still verifies the final call in more than one spot.

The probe is the cheap half of temperature control. The cooker is the expensive half, and the categories split by how much of the holding work they do for you.
