How many BTUs a gas grill needs, and when the number lies
Divide main-burner BTU by primary grate area. 80 to 100 per square inch is the healthy propane band. The Weber Spirit E-325 lands at about 86.

A gas grill needs about 80 to 100 BTU per square inch of primary cooking grate, a benchmark drawn from manufacturer buying guidance. No total BTU figure means anything until you divide it by the grate area it feeds. That division takes ten seconds and settles most spec-sheet arguments before they start. If you are shopping charcoal, this page is the wrong tool: charcoal carries no BTU rating at all, and charcoal grills is the shelf to read instead.
BTU per square inch of grate
BTU per hour is an input rating. It counts the gas a set of burners can burn in an hour, not the temperature any square inch of grate reaches. A big total spread across a big grate is a mild grill. A modest total packed over a small grate is a hot one. The division is the entire trick.
Weber rates the Spirit E-325 at 31,000 BTU per hour across its three main burners, over a primary cooking area of 360 square inches. Divide one by the other and the grill runs about 86 BTU per square inch. That figure is arithmetic on Weber's published numbers, nothing more, and it sits inside the healthy band.
The ratio predicts two behaviors. Preheat, because more input per square inch brings the same grate up faster. And recovery, because a grill sheds heat every time the lid opens or wind picks at the firebox, and input per square inch is the reserve that claws the heat back. Two grills with identical totals can behave nothing alike on a gusty evening. The ratio is the first place to look for why.
What the band cannot do is rank two grills that both clear it. At 86 against 94, the arithmetic is done talking and the build takes over. A later section gets to that.
Why the biggest number is usually just the biggest grill
Totals climb with size, because a wider firebox carries more burners. A monster BTU figure mostly signals width, not heat. Spread the Spirit's 31,000 across a hypothetical 500 square inches and the ratio drops to about 62, a slow-preheating grill that would still print an impressive number on the box. Pack the same 31,000 over 300 square inches and it passes 100, a small grill that heats fast and shrugs off wind. Same total, opposite grills.
So read a spec sheet in this order: primary grate area first, main-burner BTU second, then divide. Sorting a retail page by BTU alone sorts mostly by size, and size already has its own filter.
None of this makes big grills a mistake. If you feed a crowd every weekend, the wide grate is the point, and the ratio just checks that the burners kept up with it. The mistake is buying the big number as if it were heat, then paying every cookout to warm steel the burners can barely feed.
What the headline number counts
Not every BTU on a spec sheet reaches the grate. A side burner heats a pot, never a steak, and a maker that itemizes rates it on its own line. Weber, for one, prints main burners, sear burner and side burner as three separate ratings on a grill that has all three. Two headline totals from two makers can therefore count different things, one main burners only, the other everything with a flame. Before comparing, find what each total includes and rebuild both around main burners only.
The Spirit E-325 carries its own footnote here. Weber's 31,000 is labeled as the three main burners, and the two boost burners under its Sear Zone sit outside that figure. Set that 31,000 against another maker's everything-included total and the Spirit reads weaker than it is.
Cooking area plays the same game. The Spirit's 450 square inch total includes a 90 square inch warming rack that will not take a burger, which is why the division above used the 360 primary figure. What the ratio cannot see
Two grills at the same 86 can cook nothing alike. The division says how much heat arrives per square inch. It says nothing about what the grill does with it: whether the grates carry enough mass to hold their surface temperature when cold food lands, whether the burner spacing leaves cool lanes along the edges, whether the lid fits tightly enough to put the heat to work instead of leaking it. Natural gas and the rating
A factory natural gas grill is rated by its maker for its own orifices, so the fuel does not automatically cost you output. Weber sells a natural gas Spirit E-325 as its own SKU and publishes the same figures for it: 31,000 BTU per hour over the same 360 square inches. Buy the SKU built for the fuel your house already has and the arithmetic transfers untouched. Converting a propane grill to natural gas is a different subject and a short one: orifices and regulators are work for a licensed gas professional, not a weekend parts order. And if there is no gas line at the house, skip the question entirely. Propane wins by default.
Common questions
Is 30,000 BTU enough for a family grill? Over a family-size grate, yes. Across 360 square inches, 30,000 BTU per hour works out to about 83 per square inch, inside the healthy band, and Weber sells the 31,000 BTU Spirit E-325 at exactly that scale. Across 500 square inches the same 30,000 thins to 60, a grill that crawls through preheat and sags in wind. The total answers nothing alone. The pair of numbers answers everything.
Do more BTUs mean hotter searing? Not by themselves. A sear happens where hot metal meets meat, so grate mass and burner placement do more for a crust than a few thousand extra BTU averaged across the whole firebox. Concentration beats totals, which is the logic of the Spirit E-325's Sear Zone: two boost burners add power under one section of grate instead of raising the number everywhere. A healthy ratio over heavy grates sears. A big total over a large, light grate mostly reads well on the box.
Does natural gas make a grill weaker? Not when the grill is built for it. Weber rates the factory natural gas Spirit E-325 at the same 31,000 BTU per hour as the propane model. Rated output is a design decision the maker commits to per fuel, not a penalty the fuel imposes. Whichever line feeds the grill, the number worth checking is still BTU per square inch of primary grate.
Run the division on everything that makes your shortlist, then let the other numbers argue. The comparison pages put figures from different makers in one table with the counting spelled out first, and the number that decides the next purchase is rarely the loudest one on the box.
