Pellet grill temperature swings: what is normal, what is not

Some movement around the set point is normal. Sustained misses call for a check of pellets, ash, airflow, weather, lid habits and sensor placement.

Pellet-grill temperatures move around the set point. Traeger describes up to about 15°F in either direction on a good-weather day, while Pit Boss says swings of 25°F either way can be normal. Those are brand troubleshooting ranges, not a universal test standard. A grill that stays far below the setting or repeatedly climbs and crashes deserves a check of fuel, ash, airflow, weather, lid habits and sensor placement before anyone assumes a failed controller.

Why the temperature moves by design

An auger pushes pellets into a fire pot in timed pulses. A fan feeds the fire air. A controller reads one sensor and decides when the next pulse drops. Pit Boss says it plainly: the grill holds temperature by switching the auger off and on at intervals, and the swing is the byproduct. Pellets catch, the temperature overshoots, the controller holds back, the fire burns down, the dip follows, the next pulse lands. The display traces a slow wave around an average, the way a kitchen oven does. The set point is a promise about the average, not the line on the graph.

Damp or old pellets

Hardwood pellets are compressed sawdust, and moisture undoes the compression. Traeger's storage guidance says moisture swells the wood and turns pellets crumbly, that crumbly pellets can clog the auger and fail to ignite, and that poor pellet quality from bad storage is the number one cause of temperature issues. Dump the hopper and look at what comes out. Sawdust at the bottom and pellets that crumble in your fingers mean the fuel failed, not the board. Refill from a bag that has lived somewhere dry, then fix the storage: Traeger's advice is airtight, under cover, and out of the hopper into a sealed container when a wet week is coming. Pit Boss's version is one line: fresher pellets perform better.

Ash in the fire pot

The fire lives in a small steel pot with air holes around it, and every cook adds ash. Enough ash restricts airflow. Pit Boss's troubleshooting for a grill running cool asks whether the fire pot has been vacuumed lately. Follow the cleaning procedure for the exact grill, after shutdown, unplugged and completely cold; hot embers and ordinary vacuums are a dangerous combination. Traeger also lists blocked airflow from oversized pans and stray foil among swing causes, so check the barrel without covering required openings.

Wind, cold, and where the grill stands

The barrel is thin steel and weather works on it all cook. Pit Boss names outside temperature and wind as common reasons a grill cannot reach its top-end temperatures. Traeger's winter guidance says to put the grill somewhere protected from harsh wind, and draws a hard safety line: never in a garage, never tight to a wall or under an overhang, because that is a fire hazard. A sheltered patio corner does more for a steady line than anything on a spec sheet. For freezing climates, Traeger sells insulation blankets for some models and says they hold heat in and cut pellet use through the cook.

How often the lid opens

Every lid lift dumps the hot air and hands the controller a deficit, which it answers with fuel, so the display swings while the loop settles. Traeger's cold-weather advice is blunt: stop opening the grill to check the food. The Traeger Westwood and Woodridge Pro both include a wired meat probe, so the food's number reaches the display without the lid moving. Peeking is the one cause here that costs nothing to fix.

Dome sensor vs grate temperature

The controller holds temperature at its own sensor, mounted through the barrel wall. The food sits somewhere else, and heat inside a barrel is not uniform, so the grate can run a different number than the display without either one lying. Before calling a grill defective, clip a suitable probe at grate level and compare it with the display. A stable grate reading alongside a moving controller reading is useful diagnostic evidence, not proof that every part is fine. If the gap or instability persists after the basic checks, document both readings and contact the maker.

When is it actually the hardware?

If fuel, ash, placement and lid habits do not explain the problem, the igniter, temperature sensor or controller may need diagnosis. Do not swap parts on a hunch. Record the set point, displayed temperature, independent probe reading, weather and timing, then contact support and follow the maker's process for the exact model.

When a pellet grill is the wrong tool

Two readers should stop troubleshooting and change category. The first wants zero involvement, ever. No hopper checks, no ash vacuum, no thought about wind. Common questions

Is a 20 degree swing normal on a pellet grill?
It can be. Pit Boss calls 25 degrees either side of the set point normal, while Traeger's good-weather guidance is about 15°F. Those are brand troubleshooting ranges rather than a universal standard. A brief 20-degree move alone is not enough to diagnose a fault; look at how long it lasts and whether the grate-level temperature also misses the target.
Do more expensive controllers swing less?
Makers claim so. Traeger says its Woodridge grills use an RTD sensor instead of a thermocouple for better temperature accuracy, and Pit Boss publishes 5°F adjustment increments for the FB2 control boards. Those are claims about reaction speed and resolution, not immunity. Wet fuel, a choked fire pot and a wind-blasted barrel sit outside the loop, and the cleverest board on the market cannot dry the pellets it is fed.
Does pellet brand matter?
Condition beats logo. Traeger calls poor pellet quality from bad storage the number one cause of temperature issues. Pit Boss says fresher pellets perform better. The bag that spent a humid month open in the garage is the problem, whatever the label says. Keep any brand sealed and dry.
Should pellets stay in the hopper between cooks?
Short term and in dry weather, yes. Traeger tells owners to empty the hopper into an airtight container when prolonged rain or high humidity is forecast. Treat the hopper as where pellets wait, not where they live.
